During my recent stay at Uxua Casa Hotel & Spa in Trancoso, I was fortunate enough to experience their culinary offerings, which reflect the region's rich heritage and vibrant flavors. The hotel’s restaurant, set against a backdrop of lush greenery, provides a relaxed and inviting atmosphere that draws upon local ingredients. One dish that truly stood out was the just-caught seafood moqueca stew. The depth of flavor was remarkable, melding fresh fish with spices and coconut milk. It felt as though each bite connected me to the ocean just beyond the restaurant. Another highlight was the manioc-thickened bobo, a traditional dish that was both satisfying and representative of the region's culinary roots. Breakfast too deserves mention; I enjoyed delightful omelets accompanied by fresh fruit that struck the right balance between sweetness and earthiness. It was evident that the staff took pride in their culinary craft, emphasizing both quality and cultural authenticity. In a nutshell, Uxua’s restaurant successfully marries innovation with tradition, inviting diners to savor local flavors all within a welcoming, beachside atmosphere.
